Bailey's Delight Cookies


I stumbled upon these little treats when I was trying to find something to use the remainder of some Bailey's in. The original recipe called for a lot more chocolate chips, I didn't have that many in the cupboard, but did have some mini M&M's so I threw those in place of the remaining M&M's and was delighted with the outcome. These cookies are great, as they have a little bit of everything in them, all the items combine together for a wonderful treat. (I used my candied pecans for my chopped pecans for this recipe).

BAILEY'S CHOCOLATE CHIP COOKIES
1/2 c. butter
1/2 c. white sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
1/2 c. Bailey's original Irish cream
2 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chocolate chips
1 King size Package M&M's
3/4 c. coconut flakes
1/2 c. chopped pecans

Cream butter and sugars until smooth. Add egg, vanilla and Baileys; blend well. Combine flour, baking soda and salt; add to mixture a little at a time, until thoroughly blended. Add chips, coconut and pecans. Drop by spoonful onto a greased cookie sheet. Bake in 375 degree oven for 10-12 minutes or until golden brown. Makes 3 dozen 3" cookies.

No Bake Cookies - A Family Favorite from my Childhood

My mom used to make these when I was a kid, and they were one of my very favorite cookies, I have continued to make them for my family throughout the years. Each time I make them, I am reminded of the delight that these little treats meant to me when I was young. Hope your family enjoys them as much as we do.

With these, they key is to cook the chocolate mix on a medium heat for the full time. Cooking them at a higher temperature for a longer period of time will not render the same results in the set up phase.

No Bake Cookies

In a saucepan over a medium heat combine:

2 c. sugar
1/2 c. milk
1/2c. butter
3 Tbsp. cocoa

Continue to boil over a medium heat for appox. 5 minutes, remove from heat

Add
1/2 c. Peanut butter (stirring until it has melted completely)

Then add:

3 c. quick oats
1 tsp. vanilla

Stir to combine all ingredients and then drop by spoonfuls onto wax paper and allow to set up. The mixture will be a bit thin in consistency, but will solidify in the cooling process.

Candied Pecans


I started making these last year, and decided that they would probably become and annual tradition in our home. If giving them as a gift, you can buy the pastry bags at your local crafts store and line them with cute Christmas themed papers, then fill them up and tie them off with some really cute ribbon. (I'll post a picture once I make some for this year!)

Ingredients:

1 lb.pecans (I buy mine at Costco. I think it is $8.95 or so for 2lbs)
1/2 cup butter
3/4 cup brown sugar
2 tsp. vanilla
1/4 tsp salt

Instructions:

Preheat oven to 350 degrees.

Place pecans in an aluminum foil lined baking dish (this will make clean up super easy).

In a saucepan, melt butter over medium heat, once the butter has melted add brown sugar, vanilla and salt and cook for another minute or so. You want all of the sugar to be dissolved, this is super important, otherwise everything will just clump together when removed from the oven.

Stir mixture until all sugar is dissolved, then pour over pecans, stirring to coat. Place baking dish in oven and cook for 30-35 minutes, stirring once .

Remove from heat and empty on wax paper to cool.
