Easy and Yummy P-Nut Butter Cookies

So, I came across these little treats here when we were having to cut flour out of Drew's diet. They are so darn easy and VERY yummy!!!

4 Ingredient P-Nut Butter Cookies

*1 Cup P-Nut Butter
*1 Cup Sugar
*1 Egg
*1 Tsp. Vanilla

Mix all ingredients together and then make into tsp. sized balls. Roll in sugar and flatten each with the bottom of a glass dipped in water (could also use a fork). Bake in a preheated 325 degree oven for 15 -18 minutes. I have also skipped the rolling in sugar step (and made them by dropping by tsp. on to baking sheets).

One of our favorite things to do is add a handful of chocolate chips to the mix!! YUM!! We just made some this afternoon. The nice thing about these is we almost always have all the necessary ingredients on hand. Enjoy!

Feeling Inspired!!!!

I have so many fun things that I am so excited to try my hand at. I am hoping to start some really fun craft projects in the next week. Photos to follow upon completion! Wanting to make some luminaries and have seen two that have really caught my attention, one for the kids rooms and the other will be for Halloween!!! Can't wait!

So it has been 1 year!

It has been a year since I started on this blogging journey of mine. When I began, I wasn't quite sure I would be able to keep up with it or have much "new" to post about. I have found this to be a very wonderful way for me to capture written snapshots of current things that are working in my thoughts and in my heart. Thank you to my dear friend , Corey, who gave me the encouragement to begin this process. I am so thankful that I have and will continue it for many years to come. I also have gained oodles and oodles of inspiration from being part of this blogging community. Sometimes it is inspiration to challenge myself to be a better me, sometimes it's inspiration for fun family time activities, sometimes it's an inspiration for a new fun craft. Whatever the inspirations is and wherever it has come from, I am immensely thankful for this community and the support given to one another.

A reflection on motherhood

Not a day goes by that I am not abundantly thankful for the blessing of being a mother to two wonderful and precious children. I am continually reminded of how much they have brought to my life and how by going through the twists and turns of childhood with them my world is forever changed. I would have never imagined the depths of my heart that would be accessed by these two little people. As they are both growing and changing, so to am I. I am taught the patience and compassion that is required to walk my 7 year old little lady through a meltdown because she is frustrated by the way someone has treated her. I am shown the strength that is required to walk my little man to the Kindergarten gate, give him a "kissing hand", and send him on his way. While their needs are changing, I am continually learning how to meet those needs. I believe this is such a huge journey with a lot of lessons along the way. The funny thing is the lessons gained aren't only by my children, but also myself. Thank you for these beautiful lessons that not only make me a better mom, but also make me a kinder, more compassionate, and more gentle human being. Thank you so much for the joy and the privilege of being your momma and thank you for the life lessons along the way, I love you both more than words !!

Doughnuts anyone?

Well, these little gems were a favorite of mine to make with my mother when I was a little girl. Recently, I have introduced my children to them, and they have become a bit of a weekend tradition around our house. They are hands down the best doughnut I have ever had and super easy and super fun!

Start off with a pack of store bought biscuits (I usually just purchase whatever is on sale, use the regular sized ones, not the super large ones). Once you have separated all of them, use something small and round to get out the centers. (I have found that a drink jigger works very nicely).

Once they are all cut, cook them in hot oil (I usually use canola). Just make sure the oil isn't too hot, as it will burn the outside and leave the insides still doughy. Using tongs to turn them and remove them from the oil.

Lastly decorate with your choice of topping/ coating, some favorites in our house are cinnamon & sugar, powdered sugar, and chocolate glaze with sprinkles. Have fun & enjoy!

What a crazy, busy & fun weekend!

So, this past weekend was so much fun but really kept us busy. We started out on Friday night with a fantastic and fun sleepover for all of Alyssa's brownie troop. The girls did an amazing job and are certainly ready for their 2 nighter at the end of the month. The next afternoon, we met up with our family at the beach for a few hours and then headed down to San Diego to visit our friends that were in town for the long weekend. It was such a treat to see them and get to meet their newest additions to their family. (They just recently welcomed twin baby boys!!) Then Sunday we had the honor and privilege of attending the wedding of a sweet friend of ours. I'm so thankful to have had an extra day to catch up on rest from an event filled and fun weekend!

If I had to fit "ME" in a bag!

Alyssa's first homework assignment for 2nd grade was a project called a "ME" bag. The students were given a brown paper bag and instructed to put 4 - 5 items in the bag that represented themselves and to be ready to share when they brought it back to class. Here were the contents of Alyssa's bag: 1.) A Cam Jansen Book (she loves to read and especially a good mystery) 2.) A family photograph (xoxo), 3.) A paint brush (LOVES anything involving art, especially paint) 4.) An apron (she loves to be in the kitchen and helping with the latest creation) 5.) A rainbow pair of glasses ("because they make her happy"). And of course, the outside of the bag couldn't go back plain, she decorated it in a nice rainbow pattern (so Alyssa =)

I loved this idea, and it got my wheels turning, what would be in my "ME" bag?
My bag would contain: 1.) A cross (most importantly I am a child of God) 2.) A family photograph (probably a silly face one, as that best suits the mood of our family most of the time). 3.) A camera (my window into the past and my memory keeper for the future) 4.) Paint, glue, decoupage, ribbon, glitter, paper, (anything crafty) continual source of inspiration) 5.) My I pod (because it makes me happy =) 6.) A great book (I too, love reading). I think that about covers "ME" in a bag. What would be in your "ME" bag & why? I'd love to hear!

A sweet treat from a sweet friend!

There is something so wonderful about receiving a gift that has been lovingly made by the hands of another. My dear friend made this amazing jam with some of her relatives and we were the honored recipients of a jar of homemade strawberry jam. So sweet!!!
